Wholegrain Pumpkin muffins, with Sunflower seeds, Pecans and Almonds

So......... Kelly is obsessed with pumpkins. Pumpkin place mats, pumpkin wall hangings, pumpkin lattes, pumpkin candies, pumpkin pie, pumpkin spice, pumpkin carving, pumpkin carvings and off course pumpkin muffins. I would normally not post muffins on my blog because well they are not quite artisan bread, but these are seasonal and delicious, and being a creation of my own I am at liberty to divulge the recipe to all of you. The best part of this recipe is that it is huge, it makes three large loaves, the only downside is the caloric density of this delightful seasonal treat. 



Really any choice of nuts can be used, My favorite is a blend of toasted walnuts and toasted pecans, but the recipe is versatile. Raisins can be used, or dried cranberries but my personal favorite thing to do is add 1 cup of frozen raw unsweetened cranberries, which are wonderful after they bake, providing a sweetness and a tartness that can not be achieved with dry fruit. I use 25% whole wheat in this recipe but 50% could easily be used, the goal is to use 4 cups of flour, so you decide!



This recipe also calls for 4 cups of sugar and 1 cup of oil, but rather that list what it does and does not have, I will simply provide the recipe! I hope you enjoy and as always

Wholegrain Pumpkin Muffins with Walnuts, raisins and cranberries. 


6 oz Water
1 Cup vegetable oil
1 15-oz can pumpkin 
4 Cups of flour (I use 1 Cup whole and 3 cups all purpose)
4 Cups sugar
1 Tbs cinnamon
1 Tbs nutmeg
1 Tbs allspice
1 tsp ground clove
1 tsp baking powder
2 tsp baking soda
1-1/2 tsp salt
1/2 cup nuts
1/2 cup raisin/ cranberries (if cranberries are raw use 3/4 cup)


1. place water and oil in mixing bowl add all other ingredients except for eggs
2. stir till one cohesive unit is formed.Add eggs one at a time and mix.
3. Mix until batter is formed, pour into oiled loaf bans and bake at 350 for about an hour or until done
4. Eat and Enjoy!!




Lather them with goat cheese when they are warm, or cut them in half put a Tbs of fresh goat cheese on them at heat them in the oven for five minutes.....Incredible!!
